Illustrated Presentation with Tasting of Olive Specialities

 

Optional extra: a jar of tapenade or a bottle of olive oil for each participant

 

Details of the session

1. Presentation and explanations about olive tree and its products, origin and manufacturing processes, the olive tree of Nice, etc.

2. Presentation and comparative tasting of three different extra virgin olive oils.

3. Presentation and comparative tasting of two types of Provencal olives.

4. Presentation and comparative tasting of three olive preparations: black tapenade, green tapenade and olive paste of Nice.

5.  Comments on the use of this products in cookery.

Duration: Approximately 45 minutes

2 .Flowers in Gastronomy

Illustrated Presentation with Tasting of Specialities made with Flowers (mimosa, rose, violet,  poppy or lavender)

 

Optional extra: a jar of flower jam for each participant  

 

Details of the session

1. Explanations about the tradition way for using flowers in Grasse Country

2. Cooking with flowers – a tradition in Grasse – illustrated by presentation of 5 flower syrups, 2 flower jams and 2 crystallized flowers.

3.Tasting of flower syrups (rose, violet, mimosa, poppy and lavender) with mineral water.

4.Tasting of two flower jams on toasts.

5.Tasting of the flowers crystallized in sugar.

6.Free aperitif tasting (white wine and flower syrup).

7. Comments on the use of this products in cookery.

1.  Presentation of the honey production:  A big diversity of flowers and honeys in the French Riviera from the seaside to the South of the Alps, presentation of Mediterranean plants and corresponding honeys

2.  Comparative tasting of five different honeys: Lavender, rosemary, thyme, eucalyptus, lemon tree.

3.  Presentation and tasting of gingerbread made with honey and orange peels

4.  Comments on the use of honeys in cookery.
